An organisation representing staff in environmental health jobs has launched a new set of guidelines designed for people working in the outdoor and mobile catering business.
The Chartered Institute of Environmental Health (CIEH) hopes that its guidance paper will prove to be basis of a consistent national standard in outdoor catering management.
Sharon Smith, strategic projects director for the CIEH, said that making food for large-scale events can be a "high risk" activity.
"Large numbers of people, frequent use of temporary staff, the temporary nature of the accommodation and high-risk products for sale place specific pressure on food and health and safety management," she stated.
Ms Smith added that the uncertainty of the British weather frequently provides an extra challenge for traders to deal with.
The CIEH has been running a campaign to boost recruitment numbers for environmental health jobs since 2003.
It said its work is appearing to be successful, with the amount of students taking environmental health courses doubling in the past four years.
